Choc-Oat-Chip Cookies

I know you all thought I would never get my S#!$ together and get this done but….here it is and it is on time!

Ingredients:

1 3/4 cups  all-purpose flour

1 tsp. baking soda

1/2 tsp salt (optional)

1 1/4 cups packed brown sugar

1 cup (2 sticks) butter, softened

1/2 cup granulated sugar

2 large eggs

2 Tbsp. milk

2 tsp. vanilla extract

2 1/2 cups quick or old-fashioned oats

I used old-fashioned oats

2 cups semi-sweet chocolate chips

I also added a handful (what ever was left in the box) of golden raisins

Directions:

  • Preheat oven to 375 degrees
  • Combine flour, baking soda and salt in a small bowl
  • Beat brown sugar, butter and sugar in a large mixer bowl until creamy
Who needs a stinking mixer....creamed the butter and sugar by hand and then licked off the rest!  Of course I washed my hands after!

  • Beat in eggs, milk and vanilla extract
  • Gradually beat in flour mixture

  • Stir in oats and chocolate chips, mix well
  • Drop by rounded teaspoon onto an ungreased cookie sheet
  • Bake for 9-10 minutes for chewy cookies and 12-13 minutes for crispy cookies
    • I choose to bake for 9  minutes…..much better chewy then crispy
  • Cool on baking sheets for 1 minute
  • Remove to wire racks to cool completely
  • Put on a flat surface…….

    HA! Great post! I didn’t think you would get it done, but clearly you are a blogging professional! Judging by the cookies on the floor, we’ll leave the “baking professional” badge on hold for a while.
