Cranberry Orange Muffins

Well, it is month two and that means muffins!  I actually baked from scratch and not scratch from a box!  Now that I think of it…my cookies were from scratch too.

Cranberry Orange Muffin

INGREDIENTS:

  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cranberries
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 teaspoon grated orange peel

DIRECTIONS:

  • Preheat oven to 400 degrees
  • Combine dry ingredients
  • Stir in cranberries
    • I used craisins
  • Beat egg, orange juice, oil and orange rind in separate bowl
    • I used lime rind….thought I had an orange but…I ate it the other day!
    • Used the remaining lime in my cocktail
Above mentioned cocktail..whiskey & gingerale with lime (of course!)

  • Add to dry ingredients all at once
  • Stir just to moisten
  • Spoon into greased muffin cups
  • fill 3/4 full
  • Sprinkle tops lightly with sugar
  • Bake 15-20 minutes until slightly brown and firm to touch
I doubled the recipe so I made 2 1/2 dozen

    Erla! Look at you go! One drop of sherry for the bowl, two for me! Nice cocktail – yum!

    I would have baked the muffins a little less…they were slightly over cooked at 18 minutes.
