Erla’s International January

Danish Vanilla Cookies


  • 1 Cup Butter
  • 1 Cup Sugar
  • 1 Egg
  • 2 Teaspoons Vanilla Extract (I used almond extract)
  • 3/4 Cup Ground Almonds (I omitted)
  • 3 Cups Flour


  • Preheat oven to 350 degrees
  • Cream the butter and sugar at low-speed until light and fluffy
  • Creaming the butter and sugar

  • Beat in egg, then vanilla extract, almonds and flour
  • The finished paste (cookie dough)

  • Put paste into a piping bag with a star-shaped tip (I used a cookie press as the paste was hard to pipe through the tip)
  • Pipe 2″ rings on to a greased cookie sheet
  • Bake for 8 to 9 minutes
  • The final product!! Not rings but just as delicious!!
