Gene’s International Cake

ok…so i never got around to doing a cake in December.  Bad sister!!  So, being the creative ‘genius’ that i am, i combined December’s cake with January’s International theme and came up with Dutch Chocolate Poop Cake!  You will understand the poop portion when you see it!  Here it is!!

  • 1 Cup plus 2 tablespoons self-rising flour, sifted (unless you want your cake to look like it has nuts in it!!)
  • 1/4 cup sugar
  • 2 Tbsp unsweetened cocoa powder, sifted
  • 1/3 cup walnuts or pecans, chopped (omitted but see above!)
  • 4 Tbsp butter, melted
  • 2/3 Cup milk
  • A few drops of vanilla extract



  • 2/3 cup soft brown sugar
  • 2Tbsp unsweetened cocoa powder, sifted
  • A scant cup of boiling water
  • International flavored ice cream to serve with


  • Preheat oven to 350
  • Put dry ingredients into a bowl, add butter, milk, vanilla and mix to form a thick batter
  • Pour mixture into a well buttered 7″ oven safe dish (pyrex bowl)
  • To make sauce, mix together the brown sugar, cocoa and boiling water.
  • Pour over the batter
  • Bake 40 minutes
    • During the baking, the chocolate sponge rises to the top and the fudge sauce forms underneath
  • Remove from oven and turn onto a serving dish (bottom up)
  • Serve warm with ice cream of your choice

    Seriously? Wow…Well, it looks better on J’s plate than as a whole. I imagine in tasted pretty good.

    Guess I can’t complain seeing as I’m two months behind on baking. I’ll catch up in Feb!!
