Erla’s Brownie February

Black Bean Brownies

  • 1 (15.5 oz) can black beans, rinsed and drained
  • 3 eggs
  • 3 tablespoons vegetable oil
  • 1/4 cup cocoa powder
  • 1 pinch salt (I omitted)
  • 1 teaspoon vanilla extract (I used orange extract)
  • 3/4 cup white sugar
  • 1 teaspoon instant coffee (optional, again I omitted)
  • 1/2 cup chocolate chips

Directions:

  • Pre-heat oven to 350 degrees and light grease an 8×8 square baking dish
  • Combine black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar and instant coffee in a blender
  • Blend until smooth and pour the mixture into the prepared baking dish
  • Sprinkle with chocolate chips
  • Bake until top is dry and the edges start to pull away from sides of pan – approx 30 minutes

These brownies are gluten, dairy and soy free!  The beans take the place of flour.  They are very moist and yummy.

I am going to test them on the family today to see if they notice the difference!!

    These were delicious! who knew they were made with black beans. Here i thought orange was the secret ingredient!!!
