Erla’s Pumpkin Soup

We LOVE pumpkins.  We went to a farm this year when they were having their all you can carry for $20 and bought a ton of pumpkins!

The Pumpkin meets the Crockpot

This is a recipe that I just threw together so bear (or is ir bare) with me.

Chicken Stock

  • Chicken thighs
  • Celery
  • Carrots
  • Basil
  • Oregano
  • Water
  • Onion

Place all in a pot and boil for a while

Making Chicken Stock

In the mean time, carve a pumpkin and bake at 350 degrees for 1 hour

In a Crock Pot

  • Place chicken stock and all veggies
  • Cut up a few chicken thighs and add to pot
  • Cut up baked pumpkin and add
  • Half bag of cranberries

Let all ingredients cook for a while.

Looks Yummy!

Take out and puree all in a blender then put back into the crock pot and cook until you are ready to eat.

I forgot one thing!  Rinse and dry the pumpkin seeds and then bake at 350 degrees for 20 minutes!
